Spinach Pie

Serves 8


Spanakopita in a casserole dish


1kg fresh spinach
500g of feta cheese
1/2 cup chopped green onion
4 cloves of minced garlic (or 2tbls of granulated garlic)
3 eggs
9 sheets of ready made phyllo pastry
1/2cup melted butter
1/4cup olive oil
1/4cup fresh chopped dill


Preheat oven to 400'.
Sautee onions and garlic in a mixture of all the butter and oil. Strain off the liquids and save for later. In large bowl mix the spinach, feta, eggs, dill, and green onion/garlic together thoroughly. In a 9x11 casserole pan grease the bottom with a little of the butter/oil mixture then layer 3 sheets of the phyllo pastry making sure to brush a layer of butter in between each layer. Spread half the spinach mixture evenly in pan then top with 3 more sheets of phyllo pastry and butter. Spread the rest of the spinach on top and cover with remaining sheets of phyllo. Make sure the top layer of pastry is completely covered in a layer of butter to avoid burning
Put into oven for 15min at 400' and then turn down to 300' for 30 min


Any remaining butter I usually mix with a little lemon juice and coat some cubed potatoes and roast them up to go with the spinach pie. Goes great with lamb or roast beef... really pretty much anything.
