Cheesy Roast Potatoes "Swedish Potatoes"

These potatoes are a delicious change to ordinary roast potatoes. This is another recipe I learnt off my mother.


4 potatoes
1 tablespoon of butter melted
1 tablespoon of parmesan cheese finely grated


1. Heat oven to 180 degrees celsius.
2. Peel potatoes and chop them in half.
3. Carefully cut vertical slits into the potatoes almost to the bottom but do not cut all the way through
4. Place the potatoes in a roasting pan, brushing a little butter underneath the potatoes (to prevent them from sticking)
5. Brush the remaining butter over the top of the potatoes and then sprinkle the parmesan cheese over the top.
6. Bake in the oven until golden brown (about 50 minutes- depending on the size of your potatoes)
7. Serve with roast meat, roast vegetables or a salad.


Optional: you could probably use olive oil instead of butter
