Shortbread Stars

I love making shortbread for Christmas as a lovely home-made gift for family and friends. Here is an easy recipe that was given to me by a lovely friend.


250g butter (softened at room temperature)
120g Icing mixture
300g plain flour
1 pinch of salt


Preheat the oven to 175 degrees Celsius.
Place all the ingredients in the bowl of an electric mixer and mix until well combined.
Remove the dough and knead on a lightly floured board.
Roll out until about 1cm thick. Use a cookie cutter to cut the star shapes.
Place the star shapes on a tray lined with baking paper.
Bake in the oven for about 10-15 minutes or until golden brown. Watch them carefully as they can burn very easily.
Cool on a wire rack and enjoy with a cup of tea.


Makes about 3 trays of cookies, depending on your cookie cutter size.
