Chicken and vegetable rolls

Serves 4+


500g chicken mince
1 onion coarsely grated
1/2 clove garlic minced
40g breadcrumbs
1 carrot finely grated
60g frozen peas and corn
125g creamed corn
1 tablespoon tomato sauce
60g grated tasty cheese
1 free range egg
3 sheets of butter puff pastry
1 free range egg for egg wash
salt and pepper to taste


1. Preheat the oven to 180 degrees celcius
2. In a large bowl combine the mince, garlic, onion, breadcrumbs, egg, carrot, creamed corn, peas and corn, tomato sauce, cheese, egg, salt and pepper. Mix well.
3. Cut the puff pastry sheets in half.
4. Spoon the mixture evenly along the centre of each sheet
5. Brush one edge of the pastry with the egg wash and roll up to seal
6. Cut up the roll into desired sizes and place on a baking tray lined with baking paper
7. Brush with the remaining egg wash
8. Bake in the oven for 25-30 minutes until golden brown
9. Serve with tomato sauce and enjoy
