Portugese BBQ Chicken with Couscous

Description

Mouth watering, chicken on a bed of cous cous. Simple and delicious! I made this one up myself last night :)

Ingredients

2 chicken thighs
1 bottle of Portugese BBQ, Peri Peri Marinade (By Nandos)
1 cup of couscous
1 brown onion
1 red capsicum
Olive Oil

Instructions

Put the chicken thigh's in a bowl and cover them in the Marinade. Let them marinate for at least 15 minutes.

While you are waiting, dice the onion and the capsicum. Heat up a saucepan on medium heat with some olive oil.

Sautee the onions for a minute or so and then add the capsicum. Sautee them for about 5 minutes.

In the meantime, boil a cup of water. Place the couscous in a bowl and cover with the boiling water. Let that sit for 5 mins and fluff it up with a fork once the couscous has absorbed all the water.

Stir the onion and capsicum in with the couscous and set that aside.

Now it's time to fry the chicken, I use the same saucepan as for the onion and capsicum.

Make sure you turn the chicken regularly, as the marinade burns very easily. Cook it for about 10-15 minutes, or until the chicken is completely cooked.

Lay the chicken out over the couscous.

Notes

I'm a big fan of Nando's sauces and marinades and this one is particularly good :) I made this for myself and my wife, but you could easily make more by doubling the recipe.
