Mother in Law's Chicken Cheese Casserole

Serves 4


This is a quick and easy casserole. Tastes amazing and it is even good for toddlers.


* 1 1/2 cups of grated cheese
* 2 cups of cooked chicken
* 2 cups of cooked rice
* 1 tin of cream of mushroom soup
* 1 small tin of evaported milk
* 1/2 cup of cornflakes
* 60g melted butter
* 1 small brown onion


* Preheat oven to 180 (160 fan forced)
* Grease a casserole dish
* Cook approx 1 1/2 cups of rice (so you have 2 cups of cooked rice)
* Dice up chicken from a roast chicken, you need 2 cups of chicken, in small pieces
* Dice brown onion and place in dish
* Add cooked rice and chicken to dish
* Pour in can of soup and milk
* Pour in 1 1/2 cup of cheese
* Mix ingredients altogether
* Melt 60g of butter
* Mix 1 cup of cheese, butter and crushed cornflakes in a cup
* Sprinkle cheese,butter and cornflakes mix over the top
* Cook in the over until top is golden brown approx 15 mins.


* You can use a roast chicken from the supermarker and cut it up for a quick meal or you can cook your own fresh chicken breast/s.
