24 mini-new potatoes 2 Tblsp cream cheese 2 Tblsp melted butter 1/4 cup parmesan cheese, finely grated chives, finely chopped parsley, finely chopped salt and pepper cooked bacon, chopped
In a microwave safe bowl, microwave the potatoes until soft, around 10 minutes or so, and let cool until safe to touch. Cut each potato in half, being sure the potato can sit on each end so the half in facing up, otherwise, cut a small slice out of the "bottom" of the potato half to make it stand up. Scoop out the flesh of each potato very carefully with a mini-mellon baller and put in a bowl. Mix the flesh with the cream cheese, melted butter, parmesan cheese, chives, parsley, salt and pepper. Mix well until all combined. Put in a large piping bag, and pipe the fleshy mixture back into the potatoes. Top with the bacon. Place in a baking dish and bake at 350 degrees C, for 5 minutes until warmed through. Enjoy with a dollop of sour cream if desired! Enjoy!
