Potato bun/loaf

This is delicious and I always have to make extra mashed potatoes so that we have enough 'leftover'. My kids have been known to leave mashed potatoes so that there is enough to make this bun/loaf
I have said it serves 10 - but that depends on how thickly you slice it and on how hungry your family is!


1 cup mashed potato (leftovers)
1 cup sugar
2 cups SR flour
1 cup milk (can be skim)


Mash potato with sugar, it will turn quite runny,
Add SR flour and milk and mix together well.
Pour into greased and lined loaf tin (or square or round tin - doesn't really matter)
Bake @ 180c for approx 45 minutes (may be more or less depending on size of tin)


you can add 1 cup of sultanas with the SR flour
or you can ice and sprinkle with coconut once the loaf has cooled.

(or you can do both!)
