A nice dish of meatballs and rice for lunch or dinner.
MEATBALLS 500 gms minced steak 1 onion 1 egg salt and pepper
SAUCE 60 gms (2 oz) butter 2 tablespoons flour 1½ tablespoons curry powder 1 cup water 2 beef stock cubes 450 gm can crushed pineapple ½ cup currants ½ cup sour cream
Serve with rice.
MEATBALLS Combine minced steak, peeled and finely chopped onion, salt, pepper and lightly beaten egg, mix well. Form mixture into 16 meatballs or smaller.
SAUCE Melt butter in pan, gently fry meatballs until lightly browned, remove from pan, add flour and curry powder, cook stirring 1 minute. Add water, crumbled stock cubes and undrained pineapple, cook stirring until sauce boils and thickens. Return meatballs to pan, add currants, reduce heat, simmer gently 35 minutes uncovered. Stir in sour cream, do not allow to boil.
