20gm butter 150gm brie sliced (make sure you slice it straight from the fridge) 150gm rindless bacon, sliced 3 shallots, finely chopped 8 eggs, beaten 1 bunch of asparagus, cut in half and then sliced in half, lengthways Salt and pepper
Pre-heat griller to hot. Cook bacon and shallots in a medium frypan until golden brown. Add egg mixture to pan and season with salt and pepper. Top with asparagus and brie and press down into mixture. Cook on a medium heat for 10 minutes. Place pan under grill and cook for a further 4 - 5 minutes until top is golden brown. Stand for 5 minutes, cut into wedges and serve.
