Blueberry frozen yoghurt

A Blueberry frozen yoghurt with a twist?


175 grms fresh blueberries
Finely grated rind and juice of an orange
3 tbsp maple syrup
500 grms natural low fat yoghurt


Blitz blueberries and orange juice in a blender to a puree
Strain through a sieve into a bowl or jug
Now stir the maple syrup and yoghurt together in a bowl
Now fold in the puree
add the finely ground rind
Churn the mixture in an ice cream machine
Then freeze for 5/6 hours
If you prefer not to use the machine
Then transfer the mixture to a container and freeze for 2 hours
Then remove and in a bowl beat until smooth
Place back in the freezer until firm.


It is best to freeze in a container/containers that you can just eat from.
