This simple chocolate cake is mixed in the one bowl. What could be easier?
2 tablespoons of butter melted 2 tablespoons of cocoa (good quality is best) 1 cup self raising flour 1 cup castor sugar 1/2 cup milk 1/2 teaspoon vanilla extract 2 free range eggs 1/2 teaspoon instant coffee
Chocolate Icing: 40 grams of butter (room temperature) 1 cup icing sugar 2 teaspoons of cocoa disolved in a little hot water 1/2 teaspoon vanilla extract
1. Add the butter, cocoa, flour, sugar, milk, vanilla, eggs and coffee in a large mixing bowl. 2. Beat with an electric mixer for about 3 minutes or until fluffy. 3. Pour into a greased loaf tin and bake at 180 degrees for about 35 minutes. 4. When cool ice with chocolate icing.
Chocolate icing: 1. Add the butter to a large mixing bowl and cream with icing sugar, adding a small amount at a time until all combined. 2. Add the cocoa and vanilla extract and beat until combined. Add extra water if the consistency is too thick.
