Strawberry jam and cream tarts

These little tarts are so quick and easy to make. You can pre-prepare the pastry cases and just fill them with jam and cream just before serving.


1 sheet of butter puff pastry
1 jar strawberry jam
100ml cream
1/2 tsp sugar
1/2 tsp vanilla essence


Pre-heat the oven to 180 degrees celcius.
Spray a mini muffin tin with oil spray.
Cut the pastry sheet into 24 squares.
Place a square into each of the muffin tin holes.
Bake for approximately 10 minutes or until golden brown.
Whip the cream until almost stiff and then add sugar and vanilla and whip until combined.
Spoon a small amount of jam into each tart case and then top with about a teaspoon of whipped cream.
Enjoy. Makes about 24.


You can use any flavour jam that you like.
