Strawberry and rhubarb crumble

Serves 4-6


Ah rhubarb, what a companion for strawberries. A tangy sweet and crunchy dessert. If you don't like it tart use less rhubarb and add more strawberries.


400 grams rhubarb
10 to 15 strawberries
1 lemon juiced
2 tablespoons sugar

Crumble ingredients
100 grams butter
100 grams plain flour
100 grams icing sugar (powdered)
50 grams slivered almonds


Wash rhubarb and strawberries
Chop rhubarb into small pieces (about 1 inch or 2.5 cm)
Cut strawberries into halves or quarters depending on size
Place fruit into a bowl add lemon juice and sugar and stir
Leave fruit and start crumble
I use a kitchen whizz food processor. ( If you don't have a processor rub butter into flour and sugar with your finger tips.)
Into the bowl add all crumble ingredients except almonds, whizz till resembles breadcrumbs add almonds and just pulse a little just to mix in
Place fruit into a buttered pie dish and sprinkle crumble over the top
Bake in oven at 170 deg C for 40 to 45 mins
Serve with strawberry yoghurt, whipped cream or ice cream.
