1 cup flour 150g caster sugar 1 tsp cinnamon 1/2 tsp Baking powder 1/2 tsp Baking soda Pinch salt 250g grated zucchini 300g Raisins or sultanas or a mix (golden raisins are nice) 75g Chopped walnuts or pecans 2 eggs I tsp vanilla essence 1/2 cup olive oil
Instructions
Preheat oven to 180c. Grease & line a loaf pan. Sift flour, cinnamon, baking soda, baking powder & salt into a large bowl. Add zucchini, raisins & walnuts. In a smaller bowl whisk the eggs, vanilla & oil together. Stir into the dry ingredients. Pour into the prepared pan & bake 45-50 minutes until a skewer comes out clean.
Notes
This is a lovely moist loaf & great when you have an excess of zucchini which you can freeze grated in 250g lots for the next loaf.
