Stir fried noodles with lots of big juicy prawns

Description

This is a nice and easy dish to make. If you can source some fresh and succulent prawns, it is absolutely delish!

Ingredients

100g Rice Noodle
400g Large prawns, peeled and deveined
2tbsp soy sauce
1tsp sugar
1tbsp vinegar
1tsp fish sauce
1/2 onion- sliced
3 cloves of garlic- minced
1/2 cup bean sprout
1 spring onion- sliced
2 tbsp olive oil

Instructions

1. Boil 1 1/2 liter of water with a pinch of salt. Once boiling, add the noodles and cook for a minute. Drain the noodles and put them aside

2. Whilst doing step 1, heat the wok over medium heat, add oil and sauté the onions and garlic until the onion is soft and the garlic turns light brown.

3. Add the prawns and stir fry until the prawn curl up and turn pink.

4. Add the cooked rice noodles and toss the ingredients together

5. Add soy sauce, sugar, vinegar, fish sauce and bean sprouts. Mix well and stir fry for about 2 minutes

6. Add the spring onion and serve!

    Yep, I'd say you could definitely use the small prawns instead (although I haven't tried it myself)

    Judith, you could also stir fry strips of pork or steak as an alternative to prawns :)

    Thanks Maggie but I can't eat prawns after getting a very bad food poisoning I just can't stomach them any more.
    But I could make it with out the prawns 4 my self then add them to 1 part 4 my hubby.Looks quite yummy though I just wish I could!
