Peanut Butter & Banana Stuffed French Toast

1 Banana
2 Slices of Bread (I used French Bread)
1-2 Tbsp Smooth Peanut Butter
2 Eggs
1/8 Cup of Heavy Cream
1/2 Tbsp Vanilla
1/2 Tbsp Cinnamon
1/4 Tsp Nutmeg
Dash of Salt


Let’s start with the french toast mix. In a bowl (one that will be easy to fit the sandwich), combine your eggs, heavy cream, vanilla, cinnamon, nutmeg and a dash of salt. Gently whip until the eggs have been scrambled and everything is combined.

Now for the sandwich! Spread a thin layer of peanut butter on each slice of bread, place your sliced banana on one slice, drizzle some honey on the other slice and put the sandwich together! Get a pan on medium heat with about a tablespoon of butter. Once it has heated and the butter is beginning to bubble, dip your sandwich in the egg mixture, coating each side and then fry in the pan about 3-4 minutes per side (or until brown).
