Eggs Benedict with holandaise sauce


1 slice homemade bread, toasted
1 egg
1 slice lean bacon
baby spinach

Holondaise sauce: 3 egg yolks, 6 tbspns soft butter, salt & pepper


layer 1 piece toasted homemade bread with 1 slice grilled lean bacon, wilted baby spinach leaves, 1 lightly poached egg, holondaise sauce & top with fresh baby spinach leaves & freshly cracked pepper.

Holondaise Sauce:

put 3 egg yolks in a heatproof bowl over a pot of simmering water (dont let bowl touch water).
whisk until pale. slowly add 6 tablespoons softened butter, 1 tbspn at a time. continually whisk until starts to thicken. season to taste with salt & pepper. stir in 1 tbspn lemon juice

    yes, i've got a bread machine, wouldnt dare try it the old fashioned way, i'd fail.
