Mexican Dip

1 425gm tin of refried beans
1 300ml jar of salsa (heat to your liking)
1 Tbs taco seasoning
1 cup of avocado mashed
1/2 lemon
1/2 ts balsamic vinegar
1/2 small red onion
1 200gm tub of low fat natural yoghurt
1/4 cup grated tasty cheese
2 roma tomatoes chopped
2 spring onions (green shallots) chopped
1/4 cup capsicum chopped


Combine refried beans and salsa together in a mixing bowl. Spread over the base of a pie dish or small rectangular serving dish. Mis the taco seasoning with the avocado, red onion, juice of the lemon and balsamic vinegar and gently spread over the top of the bean mix. Spread the yoghurt over the avocado mix and then sprinkle cheese, tomato, spring onions and capsicum over that.

Refrigerate and serve when required with corn chips or rice crackers.
