2kg of rice, cooked the night before 2 or 3 egg omelette, cooked and diced 1 pork fillet, cooked and diced 150gms ham sliced into strips 2 stalks of celery finely chopped 1 small red capsicum finely chopped 1 med onion finely chopped 1/2 bunch of spring onions (green shallots) finely chopped 4 Tbs peanut or sesame oil 1 ts salt Soy sauce to taste
Heat oil in pan and add onions and cook until transparent (not browned). Add meats and egg to heat them. Add rice and mix in well. Mix through soy sauce and salt until taste is perfect for you. Then add celery, capsicum and spring onions and mix until heated through. Serve straight away.
Other meat suitable for this dish is chicken and prawn.
