Chocolate cake

Serves 6


Nice easy chocolate cake


The Cake

225g plain flour
350g caster sugar
85g cocoa powder
1-1/2 tsp baking powder
1-1/2 Bicarbonate of soda
2 large eggs
250ml milk
125ml vegetable oil
2 tsp vanilla extract
250ml boiling water

The icing

200g plain chocolate
200ml double cream


1. preheat oven to 180C/350F/gas mark 4, grease and line two 8 inch tins.
2. place all the cake ingredients, except the water into a large mixing bowl, use a wooden spoon, or an electric whisk beating the mixture until smooth and combined.
3. Add the boiling water to the mixture, a bit at a time until smooth and very loose.
4. Place the cake mix between the two tins and bake in oven for approx 25 - 35 mins. when the top is firm place pointed implement into the cake, if it comes out clean its done.
5. remove cakes from oven, allow to cool completely and leave in tins.
6. Now make the chocolate icing, heat the chocolate and cream in a pan over a low heat until chocolate has melted, Remove and whisk until smooth and glossy and thicker, leave to cool for 2 hours, when thick enough spread over the cake.
7. Remove cakes from cake tins.
8. spread some chocolate icing over the top of one cake, place second cake on top of it.
9. place cake on a plate and ice the cake all over with the rest of the icing, use a palette knife.


This will last a few days in the fridge..
