These gorgeous sandwiches are perfect for a picnic, tea party or ladies luncheon! An absolute crowd pleaser.
200 grams cooked chicken (I usually just buy a BBQ chicken) 2 celery sticks, thinly sliced with the ends trimmed 1 small apple, cored and coarsely chopped 1/2 cup walnuts 1/3 cup S&W Whole Egg Real Mayonnaise 1 tbs chopped fresh tarragon 16 slices white bread Butter, at room temperature to spread
Place chicken, celery, apple, walnuts, mayonnaise and tarragon in a food processor and process until almost smooth. Taste and season with salt and pepper Cut the crusts off the bread. Spread butter on each slice of bread. Top half the slices of bread with the chicken mixture and then the remaining bread. Using a serrated knife, cut sandwiches diagonally in quarters to serve. Enjoy!
