Bekah's Vegetable Casserole

30 minutes to prepare and 45-60 minutes to cook

Serves 8


1 to 1 1/2 lbs.sliced zucchini;parboiled 8 minutes(drain well)

1-1lb.bag Oriental Vegetables; thawed(any style frozen veggies can be used)

1 can Cream of Mushroom Soup

3/4 up grated Cheddar Cheese

1 onion; chopped fine

3/4 cup sour cream

1 stick butter; melted

1 box Stove Top Stuffing


In separate bowl, mix together soup, cheese, onion, and sour cream..

Fold in zucchini and vegetables.Mix well.

Pour melted butter over stuffing mix. Blend well.

In a 13x9 casserole dish put half of stuffing mix on bottom.

Spoon Vegetable mix over stuffing mixture.

Put remaining stuffing mix on top.

Bake at 350 degrees for approximately 45 minutes to 1 hour.


You can use a different variety of vegetables in this and also can add leftover turkey or chicken and make a main dish meal.
