1 cup mashed ripe banana 1/2 cup brown sugar 1/4 tsp salt 1/4 cup canola oil 1 large egg 1/2 cup milk(trim is fine) 1/2 cup chocolate chips 1 unpeeled apple grated coarsely 2 cups self raising flour
Heat oven to 210c or fan-bake 200c. In a large bowl mix together the banana, sugar,salt,oil,egg & milk. Mix well Stir in the chocolate chips & apple. Sift the flour then fold it into the wet ingredients. Divide the mixture into 12 muffin pan cases that have been greased or sprayed. Bake 10-12 minutes until golden & cooked through.
Use a tangy apple for this rather than a sweet one.
