Amazing coffeecake recipe I adapted from Betty Crocker® as none of their gluten free products are available here in Canada. The original recipe calls for Bisquick® Gluten Free but I use Bob's Red Mill Gluten Free Baking Mix, its' awesome!
4 eggs 3/4 cup milk 1/2 cup butter, melted 2 teaspoons gf vanilla 3 cups gf baking mix ( whichever kind works best for your area) 2/3 cup granulated sugar 1 can (21oz) gf fruit pie filling
1 cup gf icing sugar 2 tbsp milk
1. Heat oven to 375F. Grease a 9x13 inch baking pan with shortening or wheat free cooking spray.
2. In a large bowl, stir all the coffeecake ingredients except the pie filling until blended. Beat vigorously for 30 seconds. Spread 2/3 of the batter in the baking pan.
3. Spread pie filling over batter and drop remaining batter by tablespoonfuls onto pie filling.
4. Bake 20 - 25 minutes or until golden brown. Meanwhile in a small bowl, mix glaze ingredients until smooth. Drizzle glaze over warm coffee cake.
