Upside down pineapple pudding

Serves 4


Upside down pineapple pudding


Ingredients: Tinned pineapple (3 rings)
100g butter
100g caster sugar
2 large eggs
100g self raising flour
50ml milk


1 Pre heat oven to 200c/gas 6
2 place butter and sugar in a food processor and blend.
3 Add eggs, flour and milk and blend until the mixture is smooth.
4 grease a cake tin or oven proof dish, place greaseproof paper on bottom.
5 place drained pineapple rings on bottom.
6 pour sponge mix into tin/dish.
7 place in oven for approx 15 minutes, check to see if centre is cooked by inserting stake or pointed
knife into the cake mix, if it comes out dry, then it is cooked.
8 Take out of oven and leave in tin/dish for 15 minutes, then turn out onto wire tray to cool.
9 serve with custard or any choice
