1/4 cup Sweet Chilli Sauce 1 tbsp Soy Sauce 1 tbsp fish sauce 3 tsp brown sugar 1 tbsp water 500g calamari tubes, cleaned 2 tbsp vegetable oil 1 clove garlic, crushed 1 medium onion, sliced 1 small red capsicum, sliced 2 green onions, sliced thinly
Combine sauces, brown sugar and water. Cut calamari in half lengthwise and then into pieces 4 x 4cm. Score calamari by cutting lines across the surface and then diagonally to make a diamond pattern (do not cut right through). Set aside. Heat oil in a wok until very hot and add garlic, onion and capsicum and stir-fry until just soft. Add calamari and green onions, stir-fry until calamari pieces have curled. Add the sauce and cook for another minute. Serve immediately with rice. Tips: Prawns or baby octopus can be substituted if preferred.
