My favorite potato sald

Serves 6


10 nice medium sized potatoes of your choice ( I like Yukon Golds),4 eggs, 1 carrot, 2 celery stalks, hand full of radishes, bunch of green onions or chives, mayo, mustard, spices.


Roughly peel potatoes, cut, and boil for 15 min in a large pot with salted water, place 4 eggs in a pot with water and boil for 10-15 min, dice celery, radish and green onions and toss in a bowl, peel carrot then shave little pieces of it into the bowl ( its just for color, you could dice it if youd like), drain potatoes, roughly mash them leaving a few chunks here and there and place in a large bowl. Stick potatoes in freezer for 30 min or fridge for 2 hours. Take eggs off stove, cool,peel and chop. Once potatoes are cooled, toss veggies and eggs and mix. Then add 4-5 heaping tablespoon of mayo and 2 table spoons of mustard. Flavor with onion salt and pepper and give it a good mix. Top with peprika and serve and room temp.
