Serves 4

Ingredients

Left over diced potatoes, 1 onion, 1 green pepper, left over ham or bacon, eggs, cheese, spices.

Instructions

Dice onion, pepper and ham or bacon. Throw into a large skillet and sate until vegies begin to soften. Throw potatoes in and season with cajun spice, salt, pepper, and basil. cook on medium heat until warm throw fav cheese over top, a few teaspoons of water and cover for a couple minutes, serve with eggs
