Leek and Potato Soup

Serves 4


3 leeks chopped
4 large potatoes diced
3 tablespoons butter
3/4 cup water
500 ml milk
salt and pepper
dried paprika


1. Wash and chop the leeks
2. Melt the butter in a saucepan over a low heat
3. Add the leeks and saute until clear (do not fry)

4. Peel and dice potatoes into small cubes
5. Add potatoes to the leeks
6. Add the water to cover
7. Cook until soft and blend
8. Warm the milk and add to the soup
9. Season with salt and pepper
10. Sprinkle with dried paprika (if desired)
11. Serve immediately and enjoy!


If you'd like a creamier soup just add more milk.
