2 rotis 1-2 tablespoons olive oil 2 legs roast chicken 1 tablespoon chilli sauce 1 tablespoon soy ½ thinly sliced onion 2 spring onions sliced 2 eggs beaten with salt and pepper [add 1 tablespoon of milk to the egg mixture lemon juice Coriander leaves for garnish
1. Shred the chicken, mix with chilli sauce. 2. Heat a tablespoon of oil in pan and add the onion, cook on a gentle heat until golden. Set aside, add the egg to the pan and cook gently until it reaches a semi set state. 3. Add more oil at this stage if required. 4. Mix the shredded roti and mix through well. 5. Lastly add the chicken mix and spring onions and cook gently until combined and fragrant. 6. Add lemon juice while still warm.
