Chicken Salad

Serves 2


This is a fresh summery salad.


1 free range chicken breast
chicken seasoning
1 large carrot peeled
1/2 green capsicum
1/2 avocado
1/2 cucumber
1/2 baby cos lettuce
3 sundried tomatoes chopped
oil for frying

2 tablespoons french dressing
1 tablespoon light sour cream
salt and pepper to taste


1. Sprinkle a little chicken seasoning onto the chicken breast. Fry in a frypan until cooked through, set aside.
2. Grate the carrot. Dice the capsicum, cucumber, avocado and baby cos lettuce. Place in a large mixing bowl. Add the sundried tomatoes.
3. Dice up the chicken and add to the salad.
4. Add the dressing, sour cream and season to taste. Mix well.


You could also use barbeque chicken or any other vegetables that you choose. Spring onions might be nice to add a little more flavour.
