A quick and easy dinner which can be easily adjusted to suit your taste
Ingredients
8 thick sausages of choice (I prefer Wiltshire) 1 large brown onion - diced 1 Tblspn tomato paste 2 garlic cloves crushed (or to taste) 2 420g cans crushed tomatoes or 1 large can 1-2 Tblspns Worcestershire sauce (or to taste) Good brand curry powder (start with 1 Tblspn and adjust to liking) 1-2 Tspns sugar Mixed dry herbs
Instructions
Heat a large frying pan and cook sausages until cooked through. Remove to a plate. Add a little oil to the pan and saute the onion until soft and lightly golden Add tomato paste and cook through for approx. 1 minute Add garlic and cook for approx. 1 minute until fragrant Pour in crushed tomatoes, stir to combine Add Worcestershire sauce, sugar and curry powder. Stir well and allow to come to a boil. Reduce to a simmer and taste after about 3 minutes. Add extra curry powder or sugar to taste. Season with salt and pepper and add herbs. Cut sausages into 4 and return to the pan. Stir through sauce. Allow to simmer for approx. 10 minutes or until sauce is reduced to your liking.
Notes
Serve with steamed rice or mashed potatoe with peas or steamed beans.
