Kath's Quiche Lorraine

Serves 6

Description

I make this quiche quite often, it's so easy to make, has a wonderful light fluffy filling and everyone I've served it to loved it.

Ingredients

6 eggs
300 ml cream
1 1/2 cups grated tasty cheese
4 bacon rashers diced or sliced
6 slices of your favourite ham diced or sliced
1 teaspoon dijon mustard
1 small - medium onion finely chopped (optional)
2 medium tomatoes sliced (optional)
2 tablespoons grated parmesan cheese
Salt and pepper to taste
2 sheets pre rolled puff pastry

Instructions

Pre-heat oven to 180 degrees Celsius.

Grease a large flan tin or dish and line with the puff pastry.

Whisk eggs in a large bowl then add cream, salt and pepper and dijon mustard and beat to combine.

Spread combined chopped bacon and ham (and chopped onion if using) over bottom of the pastry shell, cover with grated cheese then gently pour the egg mixture over the top.

Place tomato slices ontop of filling and top with grated parmesan cheese.

Bake for 45 mins or until quiche has risen and centre springs back when touched.
