600gm sweet potato, peeled and sliced 1 Tbs olive oil 1/4 cup orange juice 1 ts white vinegar 2 ts ginger, finely grated 1 Tbs sesame seeds, toasted 120 gm baby asian salad greens 1/2 cup bean sprouts
Instructions
Pre-heat oven to 200C. Toss sweet potatoes in olive oil and spread on shallow baking tray and bake for 15 minutes until light brown. Whisk orange juice, vinegar and ginger together and set aside to dress potatoes. When the sweet potato is cooked, mix together with salad greens, bean sprouts and dressing. Sprinkle with sesame seeds and serve.

This makes a great accompaniment to lean pork steaks!
Thanks Maggie, yeah they are apparently much lower in carbs and low GI so a good substitute for normal potato from time to time...or you can do both! Lol

Nice! I'm trying to cook more with sweet potato... they are (apparently) much better for you than normal potato's
