Cinnamon & Apple Muffins

Serves 12

Ingredients

2 medium apples (about250g each)
1 cup plain yoghurt
1/4 cup canola oil
1 large egg
1 cup sugar
1 cup wholemeal flour
1 cup plain white flour
1/2 cup raisins or sultanas
4 tsp baking powder
2 tsp cinnamon
1/2 tsp salt

Instructions

Heat oven to 200c.
Grate the unpeeled apples (discard cores)
Place apple, yoghurt, oil & egg in a large bowl & mix well.
Measure remaining ingredients into another bowl & stir with a fork.
Add the dry ingredients to the wet & gently fold together.
Do Not overmix.
Grease a 12 regular- sized muffin pan & pour mixture in evenly.
Bake for 12-15 minutes until cooked through.

Notes

If you don't like raisins you can substitute with walnuts.
Great to freeze as well.
