Vegan & Gluten Free Apple Sauce Muffins

Serves 12


1 cup gluten free oats or millet flakes or Quinoa flakes
1 cup of rice flour
1/2 cup of palm sugar (or add stevia powder to your taste)
2 tsp baking powder
1/2 tsp of baking soda
1/2 tsp of salt
1 tsp of cinnamon
1 cup of vegan milk of your choice
1/2 cup of unsweetened apple sauce
1/2 cup of blueberries or raisins
2 tbsp of flax meal
4 tbsp of water


Combine flax meal with water stirring to combine well. Set aside while you prepare the rest of the ingredients. Mix together dry ingredients. Gradually add wet ingredients. Mix to incorporate. Then add the flax meal mixture and stir to combine.

Spoon into lined muffin tray. Bake at 400 degrees for 25 minutes. Makes 12 muffins.


These muffins are awesome and sure bring back breakfast to the wheat intolerant person who misses having breakfast like myself. This recipe is not mine it is from a gluten free cook book and wanted to share it with those who are vegan and or gluten intolerant. Hope you enjoy it.
