Strawberry cheesecake

Serves 2


Strawberry cheesecake


10 digestive or ginger biscuits
60 grams butter
170 grams strawberries (halved)
6 tbsp mascarpone
6 tsp caster sugar
1 vanilla pod, split seeded scraped out, if not 1 tsp vanilla essence
200 ml double cream, (whipped )
4 tbsp Essence of rose water


1. Add the crushed digestives with some melted butter into a bowl and mix together.
2. In a separate bowl mix the mascarpone, 2 tsp sugar,vanilla and cream.
3. Press the digestive mix into a 6 inch round and 1 inch deep baking tin.
4. Add the cheese mixture to the tin and make level.
5. Add the rose water and 4 tsp caster sugar with the half strawberries in a small pan stirring until reduced.
6. Allow the reduced strawberries to cool. they should set a little too..
7. Place reduction over chilled cheesecake and add the rest of the uncooked strawberries to decorate.
8. keep it chilled in the fridge and take out of the tin.
9. Serve with cream or ice cream.


Keep it chilled then take out
