Rigatoni pasta crunch

A Pasta dish made with blitzed croutons and roast peppers


250 grams Rigatoni pasta
50 grams Croutons
2 red peppers
Virgin olive oil
Parmesan cheese
seasoning to suit


1.Clean and de - seed the peppers and place in a pre heated oven at 200/gas mark 5 for approx 20 mins
2. Place a pan with water and half teaspoon sea salt on hob and bring to boil
3. Place 250 grams Rigatoni in water and reduce heat to medium
4. Place 50 grams croutons in a blender and blitz
5. Drain pasta and mix in the blitzed croutons
6. add some virgin olive oil to bind the pasta and crouton mix
7. Slice the peppers and place in the pan too
8. Dish up
9. Grate some parmesan cheese over meal


Any seasoning to taste for your own palate. No need to salt and pepper as the croutons contain enough, otherwise it will be too salty.
