Pasta with Feta Cheese

Serves 4


This is an al fresco pasta sauce that is a family favourite in our house!


Linguine for 4 persons (cook per package instructions)
3/4 cup crumbled feta cheese
3-4 green onions chopped
3 cloves of garlic minced (or more to taste)
1/3 cup olive oil
5-6 chopped roma tomatoes
1/3 cup parmesan cheese
2 tbsp dried basil (also great with fresh chopped basil)
salt & pepper to taste


Cook linguine according to package directions. While pasta is cooking, chop tomatoes and put in bowl. add remaining ingredients and toss (resembles greek salad somewhat but finer chopped). Keep at room temperature. When Pasta is done, drain and put in pasta bowls. Top with pasta sauce. Sprinkle with more parmesan cheese if desired.


It sounds too simple to be this delicious, but it's an amazing recipe. You can add black olives for more interest. And I'll bet that you could also add some sauteed mild italian sausage sliced in small rounds, if you prefer to have some meat.
