A nice winter warmer lentil soup..
Ingredients
225 g dried red lentils 1 red onion diced 2 large carrots sliced 1 celery stick sliced 1 parsnip diced 1 crushed garlic clove 2 pints of vegetable stock 2 tsp paprica freshly ground black pepper 1 tblsp freshly chopped chives to garnish 6tbsp low fat fromage frais and fresh crusty bread to serve.
Instructions
1 put lentils,onion,vegetables,garlic, stock and paprika into a large saucepan. Bring to the boil and boil rapidly for 10 mins, reduce the heat, cover and simmer for 20 mins, or until the lentils and vegetables are tender. 2 leave the soup to cool slightly, then puree in small batches in a food processor or blender, until all is smooth. 3 Return the soup to the saucepan and heat thoroughly. Now season to taste with pepper, ( seasoning at the end of the cook ensures good seasoning) 4 serve and swirl in fromage frais (optional) and sprinkle the garnish (chives) which is also optional. Eat with crusty bread..
Notes
This is a tasy warming soup which is quite filling.

Hi kristine. I have only ever used dried lentils, but they dont have to be soaked overnight now,, progressLol

Do you have to use dried lentils or can you use them from a can?
