4 lamb steaks, cut into 3cm cubes lightly seasoned with salt 100g small mushrooms, quartered 2 medium potatoes, coarsely diced 1 tomato, cut into thin wedges 1 Tbsp fresh rosemary, finely chopped 1/2 Tbsp fresh mint, finely chopped 1/2 Tbsp fresh thyme, finely chopped 1/2 Tbsp fresh parsley, finely chopped 2 Tbsp soy sauce 1 Tbsp maple syrup 2 Tbsp olive oil 1/2 Litre water 1 Tbsp flour (thickener)
Instructions
In a large pot, heat the olive oil over a medium heat and lightly brown the lamb Add potatoes and sauté for 5 minutes Add the soy sauce and herbs and sauté for a further 5 minutes Add chopped mushrooms, chopped tomato, water and maple syrup. Bring to a gentle simmer and cook for 30mins Serve with steamed rice or polenta.
