2tbsp olive oil 2 cumberland or pork sausages 400grms new potatoes, boiled and tender, peeled and halved, 100grms fresh carrots boiled and sliced 100grms button mushrooms 1 garlic clove, chopped fresh parsley chopped
The cod fish:
25grms butter 2 x 150grms of juicy thick cod fish fillets, you can use any fish EG: hoki,herrings,sardines,halibut or turbot 1tsp flour
Instructions
To Prepare:
1: mix all the spices together, only approx a third of the spices will be use, so keep the rest in an airtight container for use later 2: heat 1 tbsp olive oil in a frying pan, when hot add the sausages and cook for approx 10 minutes turning occasionally to ensure even cooking 3: Add the remaining tbsp of oil to the pan with the sausages still in, add the potatoes to the same pan and cook on each side for approx 4 minutes, cook the mushrooms in the same pan 4: Make sure skin removed from fish 5: When the sausages are cooked through, remove to a bowl and keep warm 6: Add the chopped garlic to the potatoes still in the pan, turn down the heat, stir the garlic through the potatoes and remove to a warm bowl 7: Make sure all bits of garlic are removed from the pan, return pan to the heat 8: Now mix the flour to the spices in a small bowl 9: press the cod/fish into the mix and coat all over until well in 10: Now heat the butter in the same pan that the sausages were in, when hot add the cod/fish fillets in, keep the heat low so as not to burn the butter, but high enough to colour the cod/fish, pan fry on both sides for aprprox 5 minutes, or until cooked through 11: Now transfer the warm potatoes to a mixing bowl, chop the parsley and add to the bowl 12: Cut the sausages into slices and add to the bowl with the potatoes 13: When the cod/fish is cooked, remove from pan, allow to rest for a few minutes on a warm plate 14: Place the drained carrots and cooked mushrooms on the plate 15: Now to serve the rest, Place the potatoes and sausage mix onto the plate, place cod/fish on top and serve..
