Shirleys crunchy anzac biscuits with a difference.

Description

An easy healthy biscuit with heaps of fibre and energy. Great as a replacement for meusli bars and very easy to make. Keeps well. Great in a lunch box or as an instant energy snack.

Ingredients

1cup of plain flour
2/3cup of brown sugar
1 1/4 cups of coconut
1 1/2cups of rolled oats
100g of melted butter
2 tablespoons of maple or golden syrup
1tsp of baking soda dissolved in 4 tablespoons of boiling water.
1/2cup of raisins, sultanas, or dried cranberries

Instructions

Mix dry ingredients together
add maple syrup to melted butter and add boiling water and baking soda mix. Mix in well with dry ingredients.
Place in tablespoon lots on a sheet of baking paper or a cold greased baking tray and bake @180 degrees C for about 15 minutes until golden brown. Leave to cool on the tray then store in an airtight tin.

Notes

Dried fruit of your choice can be added. If you want a less crunchy biscuit - bake for 2 minutes less.
