Ingredients
1 cup cooked medium grain rice 2 eggs 3 tablespoons sugar 1/2 teaspoon vanilla essence 1/2 cup plain flour 1tablespoon baking powder pinch salt 1/2 cup desiccated coconut icing sugar for sprinkling vegetable oil for deep frying
Instructions
Put the rice,eggs and vanilla in a bowl and mix well. Sift flour,baking powder and salt ,then stir into rice mixture Stir in the coconut Heat the oil in a deep fryer to 180c/350f Drop tablespoons of the mixture into the hot oil a couple at a time and deep fry until golden brownon all sides Drain on kitchen towels Transfer to a serving dish and sprinkle generously with icing sugar .Serve hot ..
