First, mix 2 tsp of oil with the paprika and 1/2 tsp cinnamon in a bowl. Add the pork and make sure you mix it around so that it is fully covered. Let it marinate for about 30 mins.
Preheat your grill to high.
Get some wooden skewers and thread the pork onto them. The size of your diced pork will determine how many you will fit on the skewers... I prefer mine to be smaller pieces and have more on the skewer. You should be able to make about 8 skewers with this amount of pork.
Place the skewers under the grill and cook for about 20 mins. Keep an eye on them and turn them as needed.
While the pork is cooking, mix the couscous with the remaining cinnamon and oil in a heatproof bowl. Pour in 400ml of boiling water, and cover it for about 5 minutes.
Fluff up the couscous, mixing in the chopped parsley, and serve with the kebabs on top.
