I love love love Italian Wedding Soup and this is the closest I've come to matching the one from East Side Mario's...
Ingredients
1 Cup Orzo or Mini Bowties
4 L Chicken Broth
1lb Ground Chicken 2 Slices Bread (your choice, crumble fine) 1 Egg 2 Cloves Garlic, minced 1 tsp Onion Powder 1/4 tsp Black Pepper 1/3 Cup Fresh Parsley, minced fine 1/4 Cup Parmigian Cheese
6 Cups Fresh Baby Spinach, chopped
Instructions
Cook Orzo ( or Mini Bowties) until El dente... drain and cool.
Simmer Chicken broth.
In a medium bowl mix bread crumbs, chicken, egg, garlic, onion powder, black pepper, minced parsley and parmigian cheese and make small meatballs. Drop meatballs into the Chicken broth to cook. Once all meatballs are made, cover and bring to a boil, turn heat down and simmer for 15 minutes.
Thanks Maggie! Orzo is a different pasta, it's rice shaped. Holds up really well in soups, doesn't go mushy like noodles.
When you try it let me know how you liked it please!
What an amazing looking soup Tammy! I really must be invited to an Italian wedding to try this haha... or maybe I should just try and cook it myself :)
