Holiday cooler with a little punch

Description

Add to sparkling wine if it is a little dry or to add a little lift and colour. Great for any celebration, Christmas or my favourite Melbourne Cup holiday.

Ingredients

1 1/2 cups frozen berries (strawberries or raspberries or both)
2 tablespoons sugar
Enough vodka to cover berries (1/2 cup)
Sparkling white wine

Instructions

Place berries in a clean jar and sprinkle sugar on top.
Allow the berries and sugar to stand til berries have softened and defrosted and the lovely juice has started to show.
Add enough vodka to cover and let stand so that the berries soak up the vodka. Stir gently so as not to break up the berries.
This mixture can be used straight away and is even nicer after being stored in the fridge. Nice bedcap when your guests have left!

To use spoon some berries and vodka syrup into champagne flute and pour in white wine slowly as it will foam over the top of your flute, top up and celebrate.

Notes

Don't drive after drinking.
