Butter Tarts (no corn syrup)

Description

This is a Canadian delight, Butter Tarts are probably know all over the globe now, but it is a Canadian tradition to have them at Christmas time. Super simple and easy to make if you use pre-made tart shells, I love that this recipe makes exactly how many shells comes in the package.

Ingredients

1 and 1/2 cups of packed golden or brown sugar
1/2 cup butter
2 eggs
2 cups of raisins
1/4 cup heavy cream (coffee cream or whipping cream works)
1 tsp of vanilla or rum

30 unbaked tart shells

Instructions

Preheat oven at 325F (170C).
Cream butter and sugar for 1 minute, then add eggs and cream for another minute. Add remaining ingredients and mix well.
Put tart shells on a large baking sheet with a lip, and pour batter into tart shells, evenly, no more than half full. Bake for 20 to 25 minutes, watching they don't burn.
They freeze well, or keep in the fridge.

    Aww, that is great to hear, I love it when people enjoy good baking. I love this recipe and have been using it forever, a friend brought me some Mexican Vanilla and I added a little extra vanilla this time, so delicious!
