Aunty Cath's potato salad

Description

This one has been passed down from my great aunty Cathy in Canada, to my Mum and now to me....very tasty and a little different from most potato salads I have tried.

Ingredients

4 - 5 large potatoes
2 eggs, hard boiled and chopped
1 medium carrot, grated
2 stalks celery, finely chopped
2 spring onions (green onions), finely chopped
1 ts mixed herbs
1 ts american mustard
1/2 cup mayo (I always use Miracle Whip cuz its a Canadian staple but any mayo will work)
1/2 light sour cream or low fat yoghurt
salt and pepper to taste
1 Tbs paprika

Instructions

Peel and cube potatoes. Boil in a pot until just tender, drain and set aside to cool. Once potatoes are cool, add eggs, carrot, celery, onion, mixed herbs and salt and pepper. Stir in mustard, mayo and sour cream and place in serving bowl. Sprinkle paprika over salad and serve.

    Hi Cindy, I am also a Canadian and know that Miracle Whip is not technically mayo but it is a salad dressing, and widely used as an alternative in recipes. My recipe uses it, but mayo works too.

    As a Canadian, I am sorry to say but Miracle Whip is not a mayo, it just as it says a whipped dressing which is somewhat sweet, and mayo is not sweet.

    Wow what an awesome potato salad, sounds like a tato salad I would love to try, the mustard, herbs and celery adds a very interesting touch:-)
